The Recipe for Forty

The school fair needed mandazi (a sweet East African fried dough) for forty people. Tryphonia’s recipe made enough for only ten. “We must scale it up (make a bigger batch, keeping the same taste),” she said.

The recipe for ten used 2 cups of flour and 1 cup of sugar. “The ratio (how two amounts compare) of flour to sugar is 2 to 1, we write it 2:1,” Tryphonia explained to Grace.

“Forty people is four times ten,” said Tryphonia. “So I multiply every ingredient by 4. That keeps the proportion (the parts in the same balance) exactly the same.”
